Our indoor-grown shiitake are smaller and more delicate than their log-grown cousins but are just as flavorful. With a rich, earthy flavor, shiitake are delicious raw, sauteed, roasted, grilled, or fried. Shiitake mushrooms are the most popular culinary mushroom worldwide by far, eclipsing all others combined. They are also the most studied mushroom in the world.
