Rubbed Kale Salad

Rubbed Kale Salad

2 Bunches of Kale (14-16 stems)
2 cloves Garlic
1/2 tsp Salt
1-2 Tbsp Lemon Juice (depends on taste, more makes it sour) 2 Tbsp Olive Oil

Wash, strip, chop kale.
Peel and mince garlic.
Add garlic, salt, oil, and lemon juice to kale. Rub, mix, massage until wilted.

Optional: Add diced cucumbers, bell peppers, tomatoes, or any of your favorite veggies. Toss in hemp hearts or shredded cheese.
