Green Scallion Onions


A scallion is made up of a white base that has not fully developed into a bulb with long green stalks that resemble chives. The white stalks are crisp and the onion flavor is very mild. Use the green leaves as a garnish, or charred on the grill. Cut the greens off and sauté or bake the Scallions till caramelized and tender, the flavor will mellow and sweeten.
