Collards are a broadleaf green with a crisp stem down the middle, and a flavor similar to cabbage, but stronger. The leaves are earthy and can be a bit bitter, slightly reminiscent of mustard greens. The stems are milder than the leaves and very crisp, tasty to munch on like a carrot stick. The heartiness of the leaves works well as a wrap, in place of a flour tortilla.
