Fairytale Eggplant

Fairy Tale eggplant is a miniature variety, eye-catching with its bright purple coloring and white streaks. They have a very mild flavor, very few tiny seeds, no bitterness, and are creamy when cooked. They soak up flavors very easily and are delicious when halved and grilled. Try cutting them in half lengthwise and searing them in a pan, cut side down, with your favorite seasonings till caramelized and finishing off in the oven till tender.
