Red Beets w/tops (bunch)

Underneath the surface, the flesh is a deep crimson and is dense, aqueous, and crunchy. Try slicing them thinly and enjoying raw, Beets are earthy and mellow similar to Mushrooms and Spinach. Chop them up, season, and bake them in the oven like a potato; this brings out the sweetness and they become very tender. The beets also have green/red leafy tops that are edible, and taste similar to chard and spinach. Wilt them down and try in stir-fries, frittatas, pasta dishes, or on the side.
