Roasted Fairytale Eggplant
Preheat oven to 500*
Slice eggplant lengthwise into 1/4 inch slices.
Oil a cookie sheet and lay down eggplant, oil top of eggplant. (Oiling the tops can be difficult if you don’t have a sprayer or a brush. I make a little puddle of extra oil that I gently dip the tops in before laying them down. Be careful not to over oil)
Season top of eggplant with salt, garlic and onion powder, parsley and a little paprika. (Or experiment with your favorite seasonings).
Bake for 15-20 minutes till bottoms are a little toasted but eggplant is still a little soft. We like it having a little crunch to it.
